We are delighted to have Calabrese Broccoli in the veg bags this week, and so it felt like the perfect time to roll out this super easy and healthy tray bake.


    Healthy Salmon Calabrese Tray Bake

    STEP 1: Mix the chopped chilli, half the chopped onions and the ginger, garlic, soy and rice wine vinegar in a large bowl. Add the salmon fillets and set aside to marinate for at least 15 minutes.

    STEP 2: Heat the oven to 200°C and line a roasting tin with baking paper. Add the broccoli pour over some cold-pressed oil or good quality olive oil, and cook in the oven for 15 minutes.

    STEP 3: Move the broccoli to the sides of the roasting tin, put the salmon pieces in the middle of the tin, then drizzle with any marinade left in the bowl. Cook for another 12-15 minutes until the salmon is cooked to how you like it.

    STEP 4: Sprinkle over leftover onions, sliced chilli, and season with salt & pepper. Then enjoy straight away!
