We don’t think comfort food is only for the winter, so we have taken this simple cheesy leek with mushroom dish and put it with the seasonal tastes of gnocchi for a tasty big lunch or fresh light dinner. Enjoy.


    Healthy Salmon Calabrese Tray Bake

    STEP 1: Heat the butter and oil in a large frying pan over a low-medium heat. Cook the leeks for 10 minutes until tender and starting to caramelise. Pop in the mushrooms and garlic, lift the heat to medium and cook for 3 minutes until the mushrooms have softened.

    STEP 2: Cook the gnocchi in a pan of well salted water until “al dente” according to the pasta pack instructions.

    STEP 3: Stir the cream into the pan of leeks along with half the cheddar. After a minute, stir in the gnocchi and season.

    STEP 4: Serve with the rest of the cheddar and walnuts onto the plates. Enjoy.
