With January here and after eating maybe a rather large amount of cheese over the festive period… I don’t know about you but I fancy a bit of salad to make me feel a bit healthier. There are some fantastic tasting salad leaves being grown at this time of year with a crunch and sometimes slightly bitter taste. So we love to dress them up with this simple Quick & Easy Salad Dressing.
- 4 tablespoons good quality Olive Oil
- 1 tablespoon Dijon Mustard (Wholegrain also works)
- 2 tablespoons Red Wine Vinegar
- Finely chopped garlic
- Pinch of sugar
- Dried herbs to taste (if would like)
STEP 1: The easiest way to make this dressing is to find an emptyy clean jar to shake it all up in. Pop some water in the jar, close the lid and give it a good shake to make sure it seals and doesn’t go everywhere. (Empty the water and dry out).
STEP 2: Pop all the ingredients in and give it a good shake making sure that everything combines together.
STEP 3: Give it a taste, think about what the flavour of your salad is like, and what you want to do with it. Want it to be sweeter, add some more sugar? Think its too strong, add some more olive oil.
STEP 4: Store in the jar in the fridge and use when ready. Enjoy
