Here’s a quick fresh Parsley sauce recipe that is perfect to go with a lovely fish dish on one of the colder nights. Our favourite is a cod fillet with parsley sauce, mash potato and a load of hearty veg.
- 40g butter
- 40g plain flour
- 500ml milk
- salt and pepper to taste
- 35g finely chopped parsley

STEP 1: Melt the butter in a saucepan over a medium heat. Stir in the flour and cook for 1–2 minutes. Keep it moving and don’t let it catch.
STEP 2: Take the pan off the heat and gradually stir in one-third of the milk. Return to the heat and simmer, stirring, until all the milk is absorbed. Repeat this process until all the milk has been added.
STEP 3:Simmer gently for 5 minutes and season with salt and pepper.
STEP 4: Stir in the parsley and serve.
