It’s easy to think that beetroot is a summer vegetable, but it grows for so much of the year with its flavour changing as the seasons change. This recipe really helps bring the flavour to life.

Ingredients:

    Roasted Balsamic Beetroot

    STEP 1: Peel and cut the beets into chunks or cubes and lay out on a greased pan or baking sheet. Toss them in the oil and salt, then soast in a preheated oven (220c) for 20-30 mins depending on the size.

    STEP 2: Mix the balsamic and honey in a bowl and once the beets are soft to the touch drizzle with the mix and return to the oven.

    STEP 3: Bake for a further 10 minutes, stirring half way through.

    STEP 4: Enjoy hot as a side dish, cooled down in a feta salad or just pick at them straight from the pan (they are that good!).
