This in our house is the only way we do carrots now.. We saw this fantastic recipe and video by Lagomchef on social media (Big Shout Out!!) and we simply love this way of cooking veg. Check out this absolutely perfect carrot side dish recipe, that has made it onto our Christmas dinner table too!
- Organic Carrots (whole and washed)
- Good Quality Cold Pressed Oil or Olive Oil
- Sea Salt
- Black Pepper
- 3 Garlic Cloves
- Coriander Seeds

STEP 1: Give the carrots a really good scrub, but do not peel or cut them up. Pop them in a roasting tin whole and give a good douse of oil and a nice pinch of salt.
STEP 2: Pop them in the oven around 180c and roast until you can pop a knife in them and they feel the right texture for how you like to eat them. (Cooking whole vegetables in this way helps to keep the flavours in, and doesn’t let them escape).
Tip: If you are short on time, for example at Christmas dinner.. you can do this bit the night before and then pop them in the fridge.
STEP 3: Blend together the garlic, 1 teaspoon of coriander seeds, 1 teaspoon of peppercorns, a nice big pinch of sea salt and a glug of olive oil. Blend until a fine paste / dressing is made. If it feels too thick then add some more oil. (We don’t have a fine enough blender so a petle and mortar works fine).
STEP 4: Heat a good sized frying pan to a medium-high heat and get the carrots in to start warming them up, and coat in the dressing along with some good teaspoons of butter to keep everything from drying it. Fry until you get some golden colours on the carrots, and that they are cooked through. Don’t be afraid to let them brown up a tiny bit… if it’s good enough for the chefs 🙂
